    Quick and easy vegetable cajun brown rice! Cooks in one skillet! Packed with veggies, flavorful spices and kidney beans!

    Ingredients

    • 3 tablespoons olive oil, divided
    • 1 medium onion, chopped
    • 3 medium stalks celery, chopped
    • 1 medium green bell pepper, chopped
    • 1 medium red bell pepper, chopped
    • 1 cup frozen or fresh corn kernels
    • 4 cloves garlic, minced
    • 1 ½ teaspoons sweet paprika
    • ¾ teaspoon dried thyme
    • ¼ teaspoon smoked paprika
    • ½ teaspoon fine sea salt
    • ¼ teaspoon cayenne pepper
    • 1 tablespoon tomato paste
    • 6 cups cooked long grain brown rice, cold
    • 1 (15 ounce) can dark red kidney beans, drained and rinsed
    • chopped fresh cilantro (or parsley), for garnish
