    Easy and fun, veggie fajita stuffed spaghetti squash! Tender squash filled with sauteed veggies, black beans and topped with plenty of guacamole!

    Ingredients

    • 2 medium spaghetti squash
    • olive oil, for brushing
    • salt and pepper, for sprinkling
    • 2 ½ tablespoons olive oil
    • 1 medium red onion, sliced
    • 1 medium red bell pepper, sliced
    • 1 medium yellow bell pepper, sliced
    • 1 medium jalapeno, seeded and sliced
    • 3 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • ¾ teaspoon smoked paprika
    • ½ teaspoon salt
    • ¼ teaspoon cayenne pepper, or to taste
    • 1 (15 ounce) can black beans, drained and rinsed
    • 2 medium ripe avocados, pitted
    • good squeeze of fresh lime juice
    • salt and pepper, to taste
    • chopped fresh cilantro
